Lunden Souza: Stuff yourself with tasty, healthy foods – Merced Sun

Stop ignoring the bad food habits and the unhealthy snacks you eat every day. Kick it in gear and start fueling your body with what it needs to function as designed. Get stuffed off these healthy stuffed meals!

One of my favorite stuffed meals is Greek stuffed pita. I make a small chicken Greek salad in a bowl: fresh Romaine lettuce, Roma tomatoes, red onion, reduced-fat feta cheese, diced chicken breast, cracked pepper and fat-free balsamic vinaigrette. Mix it all together and stuff it inside a whole wheat pita -- toasted is optional. This is a super easy way to have a quick and easy lunch. It's also handy to take with you to work because you can make the salad before work and store it in a Tupperware container and then stuff the whole wheat pita when you are ready to eat your meal.

Get stuffed with stuffed bell peppers! Gut a few medium size bell peppers and wash them out so they're ready to be stuffed. Mix together lean ground beef (sautéed in non-fat cooking spray with garlic powder, fresh ground pepper and red pepper flakes), brown rice, black beans, diced jalapeños, nonfat plain Greek yogurt and reduced fat Mexican cheese. Mix all these ingredients together in a bowl and then stuff the bell peppers to the brim. Put them in the oven at 350 degrees until they are heated to the desired temperature and the cheese is melted. Serve with reduced-fat sour cream and some hot salsa, if you like spicy food.

Getting stuffed doesn't have to be unpleasant or unhealthy, as long as you are stuffed with the proper foods. Keep being creative with your healthy meals and share your ideas with friends and family, because it gives inspiration and motivation -- a cycle we don't want to break.
